Godfrey Okoye University has secured approval for the Ferment2Taste Research Grant under the prestigious Africa-UniNet 5th Call for Research Cooperation Projects.
The 24-month international collaboration, with a total budget of €39,920, unites Godfrey Okoye University (Nigeria) and BOKU University (Austria) to explore the world of underutilized fermented foods. The project will investigate their sensory qualities, microbial safety, and nutritional value, linking tradition and culture with modern scientific approaches.
The grant emphasizes knowledge exchange, capacity building, and researcher mobility. Nigerian researchers will undergo advanced fermentation training in Austria, while Austrian experts will visit Nigeria for practical training and community engagement.
“This project reflects our continued commitment to research that addresses local challenges while contributing to global scientific advancement. By improving the understanding of fermented foods, we are working toward better nutrition, food security, and the preservation of cultural food heritage,” said Dr. Chidinma A. Okafor, Partner Coordinator at Godfrey Okoye University.

The project team is led by Dr. Philipp L. Fuhrmann (Project Coordinator, BOKU, Austria) and Dr. Chidinma A. Okafor (Partner Coordinator, GOU, Nigeria). Other members include Dr. Denisse Bender (BOKU, Austria), Dr. Charles Uba (GOU, Nigeria), and Dr. Joy Anosike (GOU, Nigeria).
The Ferment2Taste initiative marks another milestone in positioning Godfrey Okoye University as a hub of international collaboration, scientific excellence, and innovative solutions.
